My mother has all her "wichtige papiere (important papers)" in a folder in case the house burns down. This way she can grab it from the closet if there is a fire. I always tell her that run out of the house if there is a fire. She won't budge on the idea, it's a imprinted on her as a child of WW2 Europe.
If you have time, then by all means pack them but there copies of these documents at the IRS, health department, etc. Sometimes I think it might be a hidden blessing if those papers are all destroyed and we cease to exist on paper.
